Food in Bali


The majority Balinese foods generally have special tastes, strong taste and hot because of using strong and complete mixture of spices, such as using small chilies,  white & black peppers, coriander seeds,   and other spices, like onion, garlic, curcuma, ginger, camiri, galanga camperia, galanga india, nutmeg, bay leafs, citronella grass, greater galingale, turmeric, citrus, etc. All the spices are commonly cut into small pieces  and or pulverized, called “ Basa Rajang , Base Genep or Basa Gede”. The process how to make the special spices are very unique and specific and need enough time . The strong and hot taste makes the Balinese food much different with Javanese food or other ethnic foods in all regions of Indonesia which have sweet tastes. Moreover,  One of the favourite Traditional Balinese Food for Bali people is “LAWAR”( Steamed vegetables with minced meat(choice of chicken, pork, beef, shrimp, squid)and shredded coconut dressing), the food is commonly mixed with uncooked meat and  fresh blood of pig. Those perhaps other people do not like  Balinese food. They may consider the Balinese food, especially “Lawar” is not hygienic food.  Besides “lawar”, there are still other favorite Balinese food, such as:Babi Guling” (suckling pig),Urutan, Oret, Jukut Ares ( Young banana stem with pork or chicken or duck in mild complete Balinese condiment),Kekomoh,Sambal Matah - Balinese cuisine is very distinctive and can last up to one day use as long as first sauté the original palm oil. This sauce is usually combined with chicken (sliced chicken little),Betutu(Balinese Kampong chicken or Duck cooked in complete Balinese condiments, with the flavour of lemon grass and Asian bay leaves),Tum Bungkil,Pesan,Ayam Panggang dengan sambal matah,Tipat Cantok,Nasi Bubuh, Jukut Timbungan / Balung (Young jackfruit with braised pork ribs),Jukut urab( Mixed Steamed vegetables with shredded coconut sambal)and fried peanuts),Pelecing Kangkung(Steamed watercress vegetables with red hot small chilieswith the flavour of kaffir lime and home-made coconut oil, Sate Lilit,, calon, Ketipat Cantok Rice boiled in coconut leaf with steamed vegetables and tofu, comes with peanut sauce dressing.
Most of th foods have strong and hot taste. And the most favorite Balinese food  for Bali people are “Babi Guling & Lawar”.

Recently, in order to make  tourists both domestic and overseas tourists widely interested in the Balinese food, especially “ Lawar”, Bali People have started to prepare “lawar” without fresh blood and uncooked meat. Besides, they also start to prepare special “halal food”menu , such as “ Betutu from chicken or ducks, fried chicken & ducks, chicken baked, etc. Nowadays, a lot of  foreigners tourist and local tourists, especially from Jakarta and Surabaya much like to taste the Balinese food. Even the Balinese food are often prepared at Big Restaurants and International Hotels in Bali as special ethnic menus.
Nasi Goreng (Fried rice) is also very popular in Bali, due to it has a special spices and delicious taste . It can be widely tasted by all of visitors in Bali, besides , there have been also any other popular food as  alternative  food in Bali, such as Chinese and European food. Now this your choice !!

Besides the food with their strong and hot  taste, there are other Balinese food , commonly with sweet tastes, called “JAJA”. There area many kinds of Jaja, such as “ Jaja kuskus, Jaja uli, jaja kelepon, jaja sumping, jaja bantal, jaja abug, jaja begina, jaja iwel, jaja kaliadrem, jaja kupa, jaja laklak, etc.
Most of the Balinese food and jaja having deep relation with religious rituals in Bali. The foods for rituals, of course, have artistic and aesthetic performances and aspects from shape to their colors. Each shape and color bring a meaning or symbolic meaning.  Perhaps those  also make Bali people with  full of activities and very unique.
